Really good GF pizza crust recipe here:
The recipe makes two pizza crusts so I made one for dinner and froze the other to see what happens. The crust rather dry. Next time I will put a red sauce or more moist toppings (more tomatoes would have been good here). As it was, I used a low-fat vegan pesto recipe that Bryanna Clark Grogan gave out (somewhere…) years ago:
4 c. fresh basil leaves, loosely packed
8 cloves garlic
6 ox (3/4 c) reduced fat extra firm silken tofu
1/4 c. nutritional yeast flakes
1 1/2 TB broth powder
1 TB. lemon juice
1 1/2 tsp salt
Place all ingredients in food processor and process until it forms a paste.
(You can actually freeze this beautifully. I do, in 2 TB. portions and one of those was what I used on the pizza)
I then dolloped on my favorite almond ricotta from here:
and some sliced basil leaves. Was really good! Gotta love internet recipes…
edit: The frozen crust turned out GREAT! It was just as good as the one I used right away!
